Southwest Quinoa Black Bean Burgers

These are flavorful vegetarian “burgers” with a southwest spin.
I feel confident even devoted meat-eaters will be pleased and they might not even notice you've pulled a "Meatless Monday" on them!

Watermelon and Tomato Summertime Salad with mixed greens and watermelon vinaigrette

Watermelon and Tomato Summertime Salad
with mixed greens and watermelon vinaigrette

Watermelon and tomato together?! Yes! These two fruits have very different flavors but shine together with the same salty, spicy treatment (you remember from elementary school that tomato is a fruit right?!).  Topped with a generous sprinkle of tangy feta cheese, it’s summertime perfection.

Thanks to a particular enzyme found in pineapple juice and ginger this inexpensive (and sometimes tough) cut of meat is transformed into a tender melt-in-your-mouth delicacy. Mmm! My mouth is watering just thinking about it!
