Afraid No More! (Once A Month Cooking)

Have you explored the "once a month cooking" concept? I've been intrigued for awhile but a little afraid to jump in. The reward of having a dozen or so meals ready to pull from your freezer at the end of a busy day is so tempting. But alas, spending a day slicing and dicing copious amounts of produce and whipping up a dozen different meals is a little intimidating. And quite frankly, it sounds like the work of a madwoman......Hmmm maybe that's right up my alley after all!
